]]>Ah, the beginning of summer and the long-awaited warming of the winter bones. My Papou (Grandfather) and my Dad had it down. Mom would buy the meat on Thursday, Papou carefully massaged his magic and secret Spice rub on Friday, the meat was infused over a two-day period until our traditional Sunday afternoon early dinner.
What a culinary explosion. As the dry rub soaked in by the charcoal, Dad brushed the meat with our Yiayia’s (Grandmother) Greek Extra virgin salad dressing, sometimes his homemade Greek BBQ sauce, different, special, uniquely satisfying.
We served them with Yiayia’s Special Spices over Greek Potatoes finished on the grill and BBQ’d Broccoli on a skewer basted and served with Dad’s LEMONAKI sauce.
We didn’t know it at the time, but it was the beginning of Strompolos Foods and our tried and tested Dressings and Spice mixes.

]]>There are hidden secrets in our society that we may fail to listen to because of their unbelievable existence. How could that be? No way, they couldn’t get away with that. Could they? These secrets prevent us from having a healthy, grateful, and enjoyable life because of the insidious effects they have on our health. This is one big one.
“The worst, irreversible disaster in the history of our earth and its people”
HOW CAN THIS HAPPEN? The seed’s oils are extracted from the plant’s seeds with liquid, poisonous Hexane gas. This process increases oil yields. The seeds are crushed, soaked, and agitated in the toxic liquid gas until they turn to mush. The mush and the oil are then steamed to 300 degrees, in an attempt to clean out the toxic gas residue in the oil. This changes the molecular structure of the oil, making it nutritionally barren and chemically dangerous. Hundreds of scientific and medical tests substantiate this. The toxicity is rarely completely removed. The FDA has allowed a percentage of the poison to remain in the oil. The entire process is not regulated, measured, nor the results of the toxic residue recorded or known. Scientific investigations find that 2-12% of the toxic Hexane residue remains in the oil from this extraction method. The supposedly “cleaned” and nutritionally barren mush is then fed to the animals we eat. Factory farms everywhere are the most severe toxic offenders. There are hundreds of solvent extraction factories all over the world. The extraction method chokes and damages our cells, making it difficult to absorb nutrition. The cells die slowly and create inflammation that turns into every disease we suffer from. Diabetes, heart disease, organ failure, obesity, dementia, and Alzheimer’s, to name a few. This is worse for children. Women suffer hormonal imbalances, endocrine disruptions, brain development, stopping homeostasis, the ability of our body to heal itself. This horrible breaking down of the biochemistry of our planet is redefining the human species. These procedures and toxic chemicals, created by chemical corporations, and businesses selling to food manufacturers, have been proven to compromise our livestock’s health, our crops, seed health, healthy soil, and water cycles, and our Earth.
THESE UNHEALTHY AND TOXICALLY PREPARED VEGETABLE OILS ARE IN MOST ALL SALAD DRESSINGS AND USED IN COUNTLESS FOOD RECIPES AND FRYING
AVOID PLASTIC BOTTLES…They disintegrate into microscopic crystals, leach into the dressing, and worsen their already unhealthy nutritional chemistry. Especially those that contain chemicals.

We received this variation recipe from our very good friend Pantelis Kotsiopoulos, who passed away last year. A beautiful creative man who perfected the Green Bean Stefato prior to leaving us. He loved Papou's Special Spices as it lent a perfectly reliable finish to his refined recipe with no fuss. We shared it for years, not varying one percent and always the results an incredibly satisfying meal. The last time we shared was with Rotisserie Duck.

We garnish with thinly sliced yellow peppers and other contrasting colored veggies one can eat raw.
Mix in a pot! GENTLY!
Serve in a pasta bowl. Goes great with Malamatina (Brand) or other Retsina wine and Crispy Greek bread or toast.
This Green Bean Stefato (stew) was always a grand feast surrounded by any of the following: Potatoes, chicken, rice, pasta, pork, lamb, pot roast, spanakopita, pastichio, mousaka. I'll pass this recipe's on in future videos.
At the end of the meal, my Papou, (grandfather) would take the liquid left in the bottom of the stew pot and sip it like the greatest of life-giving elixirs. He did this with most dishes.

Yiayia's Greek Salad
This is for 2-4 people, or figure it out, that's this adventure.

ON SERVING:
Lay bite-sized cut romaine in a large bowl.
Pour the blend of any of our dressings and Yia Yia's Special Spices over the raw main and mix.
Lay cheese and olives on top so everyone can take however much they want of them. Save a little dressing for the top of the Feta.
When my father brought home radishes, celery, green onions, red peppers, fresh endive or/and escarole, they would be added in as Yiayia pleased.

First flavour treat in the morning and last lingering taste at night.
What a true discovery we never thought of. Friend Chris Kotsiopoulos called for a bottle of Yiayia's Special Spices. He mentioned he uses so much because he has his eggs in the a.m. with Yiayia's Special Spices on the Strompolos' Authentic Greek Dressing sautéed breakfast potatoes and over his eggs he has with his breakfast.
He has popcorn with his movie watching every night and makes his popcorn in Extra Virgin Olive Oil until popped, then adds a little Yiayia's Special Spices over.

I can't help but letting loose the passion for originally starting this business. All extra virgin olive oil dressings. What a concept. Something I've been eating all my life. Nothing new, nothing questioned, roots, history, the only way, nothing else. As I dug or was presented with the way things are now with unhealthy oils, cooked to uselessness oils wreaking havoc on our health and lives and the earth, I was enraged. Who would listen, who cares. Who does? Over the last 17 years, I felt lost in the maze of ignorance and deception that big business, chemical companies, greedy corporations and individuals trampling needlessly over the health of all of us, the earth, our animals, water, food. How could we let them do this? How could we let them drive us into the depths of food hell, shattering our lives and direction?
I've not tried to change things, only through the producing of my family's healthy intentions. Healthy food. Is this a bad thing? Whole Foods was the first to listen. They said why do we need another salad dressing on our shelf. What can you offer (12 years ago) that we don't have here, organic? What? I showed them that out of all their picks from all the dressings out there (they filter out the unhealthy, mostly, unhealthy dressings nicely with their requirements of not allowing 70 different chemicals in the items they choose for their shelves). I noted they had nothing like our dressings. ALL EXTRA VIRGIN OLIVE OIL DRESSINGS. What a concept? How unique? Something I never knew differently. They looked at me and said. "OK. We don't have that. Bring it on." From that moment, more intelligent and health-conscious and understanding, family's, people, groups, have taken our small, handcrafted offerings and made them a healthy, part of their lives. We still have no others that tread on our ground. Too expensive. People don't know the difference. Who cares.
We do. We want you to know that oils like canola, soy, corn and a few others, are cooked and toxic hexane extracted from their seeds. I don't care if they are organic, cold-pressed, they are still genetically modified, cooked so they are useless and damaging to everything they touch….and…the mush that that is left from the toxic extraction is fed to the animals we eat. What ???? What a concept?
Resist, understand, don't buy anything that first:
Have these oils inside, these 3. soy, corn, canola, they are not healthy oils.
Don't buy any dressings in a plastic container. The plastic leaches into the dressing.
Don't buy dressings that have any of the Whole Foods 75 items "don't put this in anything you sell to us". They still allow canola, but that's not right. I love Whole Foods, but they use too much canola oil in everything. Not good.

We will also tell you what dressings have them inside, but, you can READ THE LABEL and see for yourself.
This blog will list the toxic additives that are in 90% of dressings and the dressings that you should avoid at all costs. Better not to use any dressings. Taste the veggies.

The dressings on the shelf available today in your face mostly are crap. Full of pesticides, GMO’s, additives, and preservatives to get more shelf life, to make a bunch of products that will hold up in their warehouses until they are shipped to stores to lay on the shelves for as long as it takes to sell. YOU suffer for this, YOU are the victims, YOU should be the author of your good health by not purchasing this crap of the world. Make HEALTHY choices. Be aware.

“LEMONAKI“ A little lemon “LEMONAKI”
Next to the olive tree, in Greece, lemons and the lemon crop are an important part of a Mediterranean lifestyle. There are thousands of uses, in and out of the body and lives of appreciators.
To create another variation of our daily diet of Salad and Veggies, at every meal, we add lemon juice and Greek mountain picked Thyme to our Original dressing and a lighter White wine vinegar for a yummy, lemon flavoured dressing, marinade and sauce. With a touch of garlic, Ionian Sea Salt and fresh ground pepper, it gives us this easy food help in our kitchen, a gracious, subtle nuance to many, many foods.
Our favourite is to brush/marinade chicken, overnight, roast with potatoes and brush LEMONAKI over as the potatoes and chicken are roasting, for the classic Greek Chicken and Potatoes. This is just one favourite way to enjoy.

Cook for 2 hours in a 325-degree oven, baste twice during the process, if liquid bakes off, put more in. If you have a temp gauge, check for 150 degrees in the center of chicken thigh, or poke the center of thigh for clear juice. Take out cooked chicken and wrap in foil to keep moist while potatoes brown. Broil potatoes until crispy brown on top. Remove stuffing, then cut chicken in pieces and serve with potatoes on platter with lemon wedges and chopped parsley as garnish. Other suggested garnishes are large olives, feta cheese and quartered tomatoes.
